Best Waffles

 Ingredients 
  • 2 1/4 cups cold water
  • 1/2 cup raw cashews
  • 2-4 pitted dates
  • 2 cups rolled oats
  • vanilla to taste
  • 1/2 tsp salt
  • 1/2 cup coconut
 Instructions  1. Place 1 cup water in blender and process cashews and dates until smooth.

2. Add remaining ingredients and 1 more cup of water and blend well. Pour batter onto waffle iron and fill completely, covering all the grid and edges.

3. Bake until steaming stops about7-8 minutes. Blend batter again and add remaining ¼ cup of water before baking the second waffle.

 Note  Freezes well, you can double the batch and from some for a super quick and yummy breakfast.
